What Thickness Should a Wooden Chopping Board Be? (Buyer’s Guide for Home Chefs)

3 min readBy JimFrom our Sussex workshop

When you’re buying a wooden chopping board, thickness matters more than people think.

It affects how stable the board feels, how long it lasts, and whether it warps over time.

If you’ve been wondering what thickness is “best”, here’s a simple guide to help you pick the right one for your kitchen.

Why Thickness Matters

A chopping board isn’t just a flat surface. Its thickness controls:

  • stability while you cut
  • durability and lifespan
  • resistance to warping
  • how premium it feels on the worktop

Thicker boards almost always perform better in busy home kitchens.

The Ideal Thickness for Most Home Cooks

For everyday home use, the best thickness is usually:

✔ 3–4cm (30–40mm)

This size gives you a board that feels solid and won’t move around, but it’s still light enough to lift, clean and store.

Most premium oak boards — including the ones we make at Oceanic Woodstore — sit in this range because it’s the sweet spot between stability and usability.

When You Might Want a Thicker Board

If you cook a lot, bake bread, or want a statement piece on the counter, go for:

✔ 4–5cm (40–50mm)

These stay stable even under heavy chopping. They also resist moisture changes better, so they’re great in busy family kitchens.

People who love large showpiece boards often choose this size.

When a Slimmer Board Makes Sense

A thinner board might work if:

  • you have limited storage
  • you only prep light foods
  • you want something easy to lift and wash

In those cases, you can use:

✔ 2–2.5cm (20–25mm)

These are still workable, but they won’t last as long as a thicker hardwood board.

What About Very Thick Butcher Blocks?

You might see 6–12cm butcher blocks used in restaurants. These are designed for heavy cleaver use, not day-to-day chopping in a home kitchen.

They’re overkill for most households and much harder to clean and move.

Stick to 3–5cm for everyday cooking. It’s more practical and gives you the same stable feel without the bulk.

Does Wood Type Affect Thickness?

Yes. Hardwoods behave differently:

Oak

Very stable, ideal around 3–5cm.

Beech

Strong but more sensitive to moisture. Go thicker (3.5–4.5cm) if possible.

Maple & Walnut

Dense and durable, good from 3cm upwards.

Softwoods like Pine

Too soft at thinner sizes. They dent and warp easily and aren’t recommended for chopping boards.

This is why we use solid FSC oak — it stays flat, reacts well to oiling, and lasts for years.

How Thickness Affects Long-Term Durability

A thicker board:

  • warps less
  • stays flatter
  • absorbs fewer deep cuts
  • is easier to restore with sanding
  • feels better under the knife

If you want a board that lasts decades, thickness is your friend.

What Thickness Do Professional Chefs Use?

Most chefs use boards around:

✔ 4cm (40mm)

It gives the board weight, keeps it stable on stainless steel counters, and takes a beating without wearing down.

It’s also the size many high-end wooden boards are made in.

The Bottom Line

If you want a wooden chopping board that feels solid, stays flat and lasts for years, choose:

➡ 3–4cm for most kitchens

➡ 4–5cm if you want extra stability or a premium feel

Anything thinner than 2.5cm won’t hold up long-term.
